OD – Banana Oat Cookie with Chocolate Caramel

The inspiration for this cookie was our favorite breakfast item: overnight oats! So we let our oat – banana batter rest overnight, bake it to perfection, then we top it off with a chewy chocolate caramel and some toasted walnuts, simply impossible to resist, don’t you think?
